Baked Blueberry Cottage Cheese Breakfast Bowls are a healthy, protein-packed breakfast made with cottage cheese, oats, eggs, banana, and blueberries.

Ingredients
  

  • 1½ cups cottage cheese
  • 4 large eggs
  • 1 cup rolled old-fashioned oats
  • 1 ripe banana
  • ⅓ cup maple syrup
  • 1 teaspoon baking soda
  • 1 cup blueberries
  • Optional: splash of milk if batter is too thick
  • Non-stick cooking spray

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly coat four 2-cup oven-safe glass bowls with non-stick spray and place them on a large baking sheet.
  • Add the cottage cheese, eggs, rolled oats, banana, maple syrup, and baking soda to a high-powered blender. Blend until completely smooth. If needed, add a splash of milk to achieve a pourable consistency.
  • Divide the batter evenly among the prepared bowls, filling each slightly over halfway.
  • Sprinkle blueberries evenly over the tops. For the best results, use frozen blueberries or add fresh blueberries after about 15 minutes of baking to help prevent sinking.
  • Bake the Baked Blueberry Cottage Cheese Breakfast Bowls for 35–40 minutes, or until puffed, golden brown, and firm in the center. Depending on your oven, baking may take up to 45 minutes.
  • Remove from the oven and allow the bowls to cool for at least 10 minutes before serving.
  • Enjoy warm, or cover and refrigerate for easy breakfasts throughout the week.

Notes

  • Very ripe bananas create the best natural sweetness.
  • Fresh blueberries work well, though frozen are recommended for baking.
  • Add lemon zest for a bright citrus flavor.
