Ingredients

  • 1 large zucchini sliced thinly (about 1/8-inch thick)
  • Kosher salt
  • 2 tablespoons extra virgin olive oil
  • 1/2 –1 teaspoon garlic pow

Instructions

  • Lay the zucchini slices in a single layer on paper towels.
  • Sprinkle generously with kosher salt and let sit for 5–10 minutes to draw out excess moisture.
  • Pat the zucchini slices dry using paper towels or a clean kitchen towel.
  • Transfer the zucchini to a large mixing bowl.
  • Add olive oil and garlic powder.
  • Toss until all slices are evenly coated.
  • Arrange the zucchini slices in a single layer in the air fryer basket or trays. Avoid overlapping.
  • Cook the Air Fryer Zucchini Chips at 400°F (200°C) for 15–20 minutes.
  • Check around the 10-minute mark and remove any chips that have become crispy and lightly golden.
  • Continue cooking the remaining slices until all chips are crisp and golden around the edges.
  • Transfer to a wire rack and cool for a few minutes before serving.

Notes

  • For extra crispiness, allow the chips to cool completely before storing.
  • Try serving with ranch dressing, Greek yogurt dip, or hummus.
  • Fresh zucchini works best for this recipe.
  • Adjust garlic powder according to personal taste preference.
