Air Fryer Veggie Chips Crispy Homemade Snack

Ingredients
  

  • 1 sweet potato peeled
  • 1 white potato russet or Yukon, peeled
  • 1 large carrot peeled
  • 1 red beet peeled
  • 1 golden beet peeled
  • 2 tablespoons olive oil about 2 tsp per batch
  • Kosher salt to taste
  • Ground black pepper to taste
  • 1 teaspoon smoked paprika optional

Instructions
 

  • Preheat your air fryer to 320°F (160°C).
  • Slice the sweet potato and white potato into very thin slices (about 1/16 inch) using a mandoline.
  • Place the slices in a bowl and rinse under cold water until the water runs clear to remove excess starch.
  • Pat the slices completely dry using paper towels.
  • Slice the carrot and beets into thin rounds.
  • Toss each vegetable batch with a small amount of olive oil, salt, pepper, and smoked paprika if using.
  • Arrange slices in a single layer in the air fryer basket. Avoid overlapping.
  • Cook each batch for 8–12 minutes, flipping halfway through, until crispy.
  • Remove and let cool slightly—they will crisp up more as they cool.
  • Repeat with remaining batches. Enjoy your Air Fryer Veggie Chips fresh.

Notes

  • Swap vegetables with zucchini, parsnips, or taro for variation.
  • Serve with yogurt dip, hummus, or guacamole.
  • Add garlic powder or chili powder for extra flavor.
