Air Fryer Vegetables are a quick and healthy side dish.
Cook mixed vegetables in the air fryer in just 8 minutes.
Perfectly tender with crispy edges every time.

Ingredients
  

  • 1 large bell pepper cut into 1.5-inch pieces
  • 1 medium zucchini sliced ¼ inch thick
  • 1 cup broccoli cut into medium florets
  • 1 cup cauliflower cut into medium florets
  • 1 cup cremini mushrooms sliced
  • 1/2 large red onion cut into 1-inch pieces, layers separated
  • 1/4 cup olive oil or less
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat your air fryer to 380°F (193°C).
  • Cut all vegetables into uniform sizes for even cooking.
  • In a large bowl, toss vegetables with olive oil, garlic powder, salt, and black pepper.
  • Arrange vegetables in a single layer in the air fryer basket.
  • Cook Air Fryer Vegetables for 8 minutes, shaking halfway through.
  • Remove once tender with slightly crispy edges and serve immediately.

Notes

  • Swap vegetables based on preference (carrots, green beans, asparagus).
  • Serve with grilled chicken, rice, or wraps.
  • Add lemon juice before serving for brightness.
