Air Fryer Vegetables

Air Fryer Vegetables are an easy and healthy side dish made with fresh mixed vegetables, olive oil, and simple seasonings. Air fry until perfectly crisp-tender in about 12 minutes per batch. Serve with lemon, Parmesan, and fresh parsley.

Ingredients
  

  • 1 zucchini or yellow squash cut into ½-inch half-moons
  • 1 red bell pepper chopped into 1-inch pieces
  • 4 ounces cremini mushrooms quartered
  • 1 small red onion chopped into 1-inch pieces
  • 1 carrot sliced into thin rounds
  • 1 heaping cup broccoli florets
  • 1 heaping cup cauliflower florets
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • Lemon wedge
  • Grated Parmesan cheese optional
  • Fresh parsley chopped

Instructions
 

  • Preheat your air fryer to 375°F (190°C).
  • In a large bowl, combine the zucchini, bell pepper, mushrooms, onion, carrot, broccoli, and cauliflower.
  • Drizzle with olive oil and season with Italian seasoning, garlic powder, sea salt, and black pepper.
  • Toss until every vegetable is evenly coated.
  • Arrange the vegetables in a single layer inside the air fryer basket. Avoid overcrowding for the crispiest Air Fryer Vegetables.
  • Cook for 10–15 minutes, shaking or tossing halfway through cooking. Around 12 minutes is ideal for crisp-tender vegetables.
  • Repeat with the remaining vegetables.
  • Transfer to a serving dish.
  • Squeeze fresh lemon juice over the vegetables.
  • Garnish with Parmesan cheese and fresh parsley if desired. Serve immediately.

Notes

  • Parmesan cheese can be omitted for a dairy-free version.
  • Fresh herbs like basil, thyme, or rosemary also work beautifully.
  • Serve with grilled chicken, salmon, steak, or pasta.
