Ingredients
  

  • 10 Brussels sprouts
  • 1 –2 shallots sliced
  • 1 cup zucchini diced
  • 1/3 cup green bell pepper chopped
  • 1/3 cup red bell pepper chopped
  • 10 cherry tomatoes
  • 1/4 teaspoon salt plus more to taste
  • 1/4 teaspoon paprika plus more to taste
  • 1/4 teaspoon garlic powder plus more to taste
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  • In a large bowl, combine Brussels sprouts, shallots, zucchini, bell peppers, and cherry tomatoes.
  • Add olive oil, salt, paprika, and garlic powder. Toss well to coat evenly.
  • Let the vegetables marinate for a few minutes if time allows.
  • Thread the vegetables onto skewers, alternating for color and balance.
  • Place skewers in a single layer in the air fryer basket, leaving space between them.
  • Cook the Air Fryer Vegetable Skewers at 380°F for 6–8 minutes.
  • Flip and cook for another 3–5 minutes until tender and slightly crispy.
  • Remove and serve warm or cold with herbs or your favorite sauce.

  • Serve with tahini sauce, yogurt dip, or hummus.
