Preheat your air fryer to 380°F (190°C) for about 5 minutes.
In a large bowl, combine Brussels sprouts, shallots, zucchini, bell peppers, and cherry tomatoes.
Add olive oil, salt, paprika, and garlic powder. Toss well to coat evenly.
Let the vegetables marinate for a few minutes if time allows.
Thread the vegetables onto skewers, alternating for color and balance.
Place skewers in a single layer in the air fryer basket, leaving space between them.
Cook the Air Fryer Vegetable Skewers at 380°F for 6–8 minutes.
Flip and cook for another 3–5 minutes until tender and slightly crispy.
Remove and serve warm or cold with herbs or your favorite sauce.
