Remove the skin and bones from the salmon, then cut into 1-inch cubes.
In a bowl, mix soy sauce, honey, rice vinegar, and sesame oil. Grate in garlic and ginger.
Add salmon and toss to coat evenly. Let marinate for at least 10 minutes.
Preheat air fryer to 390°F (200°C). Lightly spray the basket with oil.
Arrange salmon in a single layer without touching.
Air fry for 5–8 minutes, flipping halfway and brushing with leftover marinade.
