Air Fryer Roasted Vegetables are a quick and healthy side dish.
Mixed vegetables are seasoned and air fried until perfectly tender.
Ready in about 20 minutes with minimal oil and maximum flavor.

Ingredients
  

  • 1 cup fresh broccoli florets
  • 1/2 cup chopped zucchini quarters
  • 1/2 cup sweet potato cubes or butternut squash cubes
  • 1/2 cup chopped yellow squash quarters
  • 1/2 cup fresh cauliflower florets
  • 1/3 cup chopped carrots
  • 1/4 cup chopped red onion
  • 1 teaspoon avocado oil or olive oil
  • 1 teaspoon fine-grain sea salt or kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2/3 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions
 

  • Preheat your air fryer to 390°F (200°C) if preheating is recommended for your model.
  • Place the broccoli, zucchini, sweet potato, yellow squash, cauliflower, carrots, and red onion in a large mixing bowl.
  • Drizzle the vegetables with avocado oil or olive oil.
  • Sprinkle with sea salt, black pepper, garlic powder, and paprika.
  • Toss thoroughly until all vegetables are evenly coated.
  • Arrange the vegetables in a single layer inside the air fryer basket. Avoid overcrowding and work in batches if necessary.
  • Cook the Air Fryer Roasted Vegetables for 8–12 minutes, shaking the basket halfway through cooking.
  • Continue cooking for an additional 2 minutes if you prefer extra caramelization and crispier edges.
  • Transfer to a serving bowl.
  • Garnish with fresh parsley, cracked black pepper, and lemon wedges before serving.

Notes

  • Sweet potatoes can be substituted with butternut squash for a slightly sweeter flavor.
  • Fresh vegetables work best, but frozen vegetables can be used with slightly longer cooking times.
  • Serve alongside grilled chicken, baked fish, steak, or grain bowls.
  • A squeeze of fresh lemon juice brightens the flavors beautifully.
