Trim the ends off each corn cob using a sharp knife.
Stand each cob vertically on a sturdy cutting board and carefully cut it in half lengthwise.
Place each corn half flat-side down and cut lengthwise again to create quarters.
Cut each quarter in half crosswise to create long rib-like pieces.
Melt the butter and brush it generously over all the corn ribs.
Arrange the Air Fryer Corn Ribs in a single layer inside the air fryer basket. Work in batches if necessary.
Air fry at 400°F (200°C) for 6 minutes.
Flip or rotate the corn ribs and cook for another 6 minutes until curled and lightly charred.
While the corn cooks, combine mayonnaise and sriracha in a small bowl to make the spicy mayo.
In another small bowl, mix together chili powder, paprika, salt, garlic powder, cumin, and black pepper.
Transfer the cooked corn ribs to a large serving bowl.
Sprinkle evenly with the seasoning blend.
Top with grated Cotija or Parmesan cheese.
Garnish with fresh cilantro if desired.
Serve immediately with spicy mayo drizzled over the top or on the side for dipping.
