Ingredients

  • 2 tablespoons sour cream or Mexican crema
  • 1 tablespoon lime juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Cooking spray
  • 2 8-inch flour tortillas
  • 1 cup cooked chicken cubed or shredded
  • 1 cup shredded Mexican-blend cheese

Instructions

  • Preheat your air fryer to 350°F (175°C).
  • In a small bowl, whisk together the sour cream, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
  • Lightly spray the air fryer basket with cooking spray.
  • Spread the chili lime sauce evenly over one tortilla and place it sauce-side up in the basket.
  • Sprinkle the cooked chicken evenly across the tortilla, then top with the shredded Mexican-blend cheese.
  • Place the second tortilla on top and lightly spray it with cooking spray.
  • Secure the edges with two or three toothpicks to keep the tortillas from lifting during cooking.
  • Cook the Air Fryer Chicken Quesadillas for 8 minutes, carefully flipping halfway through cooking.
  • Remove from the air fryer and let cool for 2–3 minutes.
  • Slice into four wedges and serve with guacamole, pico de gallo, salsa, or sour cream.

Notes

  • Swap Mexican-blend cheese with cheddar, Monterey Jack, mozzarella, or pepper jack.
  • Whole wheat tortillas work well for a healthier option.
  • Serve alongside Mexican rice, a fresh salad, or tortilla chips with salsa.
  • Leftover shredded chicken is perfect for this chicken quesadilla recipe.
