Ingredients
  

For the chicken:

  • 2 skinless free-range chicken breasts
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 tsp cayenne pepper
  • ½ tsp dried oregano

For the salad:

  • 1 tbsp runny honey
  • 1 tbsp Dijon mustard
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp cider vinegar
  • 1 garlic clove finely grated
  • Handful cherry tomatoes halved
  • ½ iceberg lettuce roughly chopped
  • 1 tbsp capers drained

Instructions
 

  • Place each chicken breast between baking paper and gently flatten to an even thickness.
  • Prick the chicken with a fork and coat with lemon juice and olive oil.
  • Preheat the air fryer to 190°C.
  • Mix paprika, salt, pepper, cayenne, and oregano, then rub evenly over the chicken.
  • Cook in the air fryer for 16 minutes, turning halfway through. This ensures perfectly cooked Air Fryer Chicken Breast Salad chicken every time.
  • In a jar, combine honey, mustard, olive oil, vinegar, garlic, salt, and pepper. Shake well to make the dressing.
  • Toss lettuce with some dressing and divide into bowls.
  • Add tomatoes and capers on top.
  • Slice the cooked chicken and place in the center.
  • Drizzle remaining dressing and serve immediately.

Notes

  • Swap iceberg lettuce with romaine or mixed greens.
  • Add toasted nuts or seeds for crunch.
  • Serve with warm flatbread for a more filling meal.
