Air Fried Chicken Tender Salad with Honey Mustard

Crispy air-fried chicken tenders served over fresh salad.

Ingredients
  

  • 1 lb chicken tenders
  • 1/2 cup gluten-free breadcrumbs
  • 1 egg whisked
  • 1/2 tsp sea salt
  • 1/4 tsp Italian seasoning
  • 1/4 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 cups romaine lettuce
  • 1/2 cup tomatoes
  • 1/2 cup cucumber
  • 1/2 avocado
  • 1/3 cup red onion slivered

Honey Mustard Dressing

  • 3 tbsp Dijon mustard
  • 1/2 tsp whole grain Dijon
  • 3 tbsp honey
  • 1 tsp apple cider vinegar
  • Dash of sea salt

Instructions
 

  • In a bowl, mix breadcrumbs with salt, Italian seasoning, paprika, garlic powder, and onion powder.
  • Whisk the egg in a separate bowl.
  • Pat chicken tenders dry. Dip into egg, then coat in breadcrumb mixture.
  • Place chicken in the air fryer at 350°F (175°C) for 14 minutes, flipping halfway through.
  • Prepare the salad with romaine lettuce, tomatoes, cucumber, avocado, and red onion.
  • Mix all honey mustard dressing ingredients in a small bowl.
  • Slice the cooked chicken and place over the salad.
  • Drizzle with dressing and serve your Air Fried Chicken Tender Salad with Honey Mustard immediately.

Notes

  • Use maple syrup instead of honey if preferred
  • Add cheese like feta or parmesan for extra flavor
  • Serve with warm pita or flatbread
