5 Ingredient Breakfast Hand Pies

Ingredients
  

  • 2 sheets frozen puff pastry thawed
  • 6 large eggs divided
  • 8 oz beef sausage cooked and crumbled
  • 1 cup shredded cheddar Colby Jack, or Mexican blend cheese
  • 3 –4 tablespoons softened cream cheese salsa, ketchup, or pesto
  • 2 tablespoons milk or cream optional
  • Salt and pepper to taste
  • 1 teaspoon Everything Bagel seasoning or sesame seeds optional
  • All-purpose flour for dusting

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cook the beef sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease and let cool slightly.
  • In a bowl, whisk 5 eggs with salt, pepper, and milk or cream if using.
  • Scramble eggs in a lightly greased skillet over medium-low heat until just set and still slightly glossy. Remove from heat.
  • Lightly flour your surface and unfold puff pastry sheets. Roll gently to smooth creases and cut each sheet into 4 rectangles for a total of 8.
  • Place 4 pastry rectangles onto the prepared baking sheet. Spread about 1 tablespoon of sauce in the center of each.
  • Divide scrambled eggs evenly over each pastry base. Top with beef sausage and shredded cheese.
  • Beat the remaining egg with 1 teaspoon water to make an egg wash. Brush pastry borders lightly.
  • Place remaining pastry rectangles on top. Press edges together and crimp with a fork to seal.
  • Brush tops with egg wash and cut small slits for steam vents. Sprinkle with Everything Bagel seasoning if desired.
  • Bake the 5 Ingredient Breakfast Hand Pies for 18–22 minutes until puffed and deep golden brown.
  • Cool for 5–10 minutes before serving.
