Heat the olive oil in a large skillet over medium-high heat.
Season the chicken lightly with salt and black pepper.
Add the chicken cubes to the hot skillet.
Cook undisturbed for 3–4 minutes until golden brown on one side.
While the chicken cooks, prepare the sauce.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and red pepper flakes.
Turn the chicken pieces over.
Pour the honey garlic sauce into the skillet.
Toss the chicken to coat evenly.
Continue cooking for 4–5 minutes until the chicken is fully cooked and the sauce thickens slightly.
Remove from the heat.
Serve immediately over rice if desired.
Garnish with sliced green onions, sesame seeds, chopped peanuts, and a squeeze of fresh lime juice.
